After fermentation, the bottles were left to age on the lees for a minimum of 6 years, adding depth, richness, and a very fine bubble. In September 2022, the wine was taken from ageing and corked for release. The Chardonnay fruit came from a Waterford Estate vineyard planted specifically for Cap Classique.
