Production Details Waterford Estate Blanc de Blancs Cap Classique 2019 from Helderberg Mountain, Stellenbosch. Chardonnay grapes were hand harvested and whole-bunch pressed, with only free-run juice transferred to stainless steel for fermentation. The wine spent 8 months on the lees before bottling and was then aged under crown for 6 years before disgorging. The cooler, wetter 2019 Cape Winelands season yielded a fruit-forward wine with a softer structure.
