Production Details Waterford Estate Blanc de Blancs Cap Classique 2017 from Helderberg Mountain, Stellenbosch. Chardonnay grapes were hand harvested and whole-bunch pressed, with only free-run juice transferred to stainless steel for fermentation. The wine spent 8 months on the lees before bottling, then 6 years ageing on its lees under crown cap for a refined mousse and brioche character.
