Production Details Waterford Methode Cap Classique 2014 from Stellenbosch. Production quantity was 110 cases. The wine was aged 95% in stainless steel and 5% in fifth-fill French oak barrels. It spent 6 years on the lees and just short of 1 year under cork before release, giving mineral backbone, brioche notes, fine bubbles, and a long aftertaste. The 2014 growing season featured a long winter, delayed pruning from late rain and cold, strong flowering conditions, and a very warm February that accelerated ripening into a quick harvest.
