Production Details Waterford Estate Blanc de Blancs Cap Classique 2018 from Helderberg Mountain, Stellenbosch. Chardonnay grapes were hand harvested and whole-bunch pressed, with only free-run juice transferred to stainless steel for fermentation. The wine spent 8 months on the lees before bottling, then 6 years under crown cap, building texture, depth, a more refined bubble structure, and greater richness with time.
