Production Details Waterford Methode Cap Classique 2011 from Stellenbosch. The first fermentation was carried out in stainless steel and the wine was aged on the gross lees for 8 months before bottling for second fermentation. After the second fermentation, the wine was aged on the lees for 7 years and then for 1 year under cork prior to release, building brioche richness, delicate texture, and length.
