Production Details Not Tonight Josephine is a singular luscious Chenin from a high-altitude vineyard in Piekenierskloof, where the grape naturally develops exceptionally high acidity. The grapes are harvested then dried in the sun on nets for several weeks, concentrating sugar, matter, and aromas. After foot treading, a slow fermentation begins and can last up to a year, before aging in old barrels and demijohns. A confidential, energetic, and timeless wine, whose tension perfectly balances its richness.
