Production Details Grapes were hand harvested and hand sorted, followed by gentle whole bunch pressing to extract the finest juice. No further maceration of the juice with the skins was allowed, nor the addition of extraction enzymes or settling agents, which resulted in a very light salmon colour rose. The juice was run down via gravity into tank and left to settle naturally for 12 hours. From there, the clean juice was racked off to wooden fermenters to start spontaneous fermentation, relying on wild yeasts. Fermentation in older wooden fermenters ensures a slow ingress of oxygen and a longer fermentation without picking up oak aromas. The wine was then left on the primary lees for an extended period to add further complexity before bottling. The 2023/2024 growing season saw excellent winter conditions with over 1,000 mm of rain in 2023, and extreme flooding. Winter days and nights were cool, ensuring proper dormancy. Dams were replenished and groundwater reserves looked good. Spring brought strong winds and warmer days. Veraison was about 10 days earlier than in 2022. Strong winds affected fruit set and vineyard canopies, indicating stressed vines. Picking started around the 3rd week of January, with temperatures normalizing in February, and finished in the first week of March. Vines had many bunches, but berries were tiny, leading to concentration and bright acids. This vintage is smaller but packed with flavour.
