Production Details Grapes were hand harvested and hand sorted, followed by a gentle whole bunch pressing in a new horizontal basket press to extract only the finest juice. No further maceration of the juice with the skins was allowed, nor the addition of extraction enzymes or settling agents, which resulted in a very light salmon colour rose. The juice was run down via gravity into tank and left to settle naturally for 12 hours. From there, the clean juice was racked off to wooden fermenters to start the fermentation spontaneously, relying on wild yeasts that occur naturally in the vineyard. The reason for fermenting in older wooden fermenters is to ensure a slow ingress of oxygen throughout the process and therefore a longer fermentation without picking up any oak aromas. The wine was then left on the primary lees for an extended period to add further complexity before bottling. The 2025 vintage on the cool slopes of the Schapenberg will be remembered for its poise and precision. A mild, dry growing season, tempered by Atlantic breezes, allowed for slow, even ripening and excellent balance between sugar and acidity. White varietals such as Chenin Blanc and Sauvignon Blanc show lifted aromatics and fine texture, while early reds offer purity of fruit and supple tannins. Later-ripening varieties, including Cabernet and Syrah, display depth, structure, and strong ageing potential. With slightly lower yields, the focus is firmly on quality. Ongoing regenerative farming practices, including cover crops, minimal soil disturbance, and increased biodiversity, have strengthened vine resilience, improved soil health, and enhanced the clarity of site expression. A vintage defined by elegance, freshness, and a true reflection of the Schapenberg terroir.
