Production Details Single-vineyard Shiraz from Stellenrust's Helderberg property, planted in 1972. Grapes were harvested at 24-25 Balling, crushed, and cold macerated for 24 hours in open fermenters. 38% of the wine was fermented as whole bunches and inoculated with French Rhone yeast strains. Fermentation ran on the skins for 10-14 days with manual punch-downs every 2-6 hours. The wine finished alcoholic and malolactic fermentation in stainless steel tanks, then matured for 12-14 months in oak.
