Production Details The 2024 season began with notable early rainfall that replenished soil moisture and supported healthy early growth, followed by an extended dry period from late September through mid-February. Consistently warm summer temperatures accelerated ripening in the early cultivars, leading to slightly lighter yields and, in certain areas, reduced irrigation availability. Despite these challenging dry conditions, the grapes achieved excellent concentration and balance, resulting in fruit of exceptional quality and purity — promising outstanding wines from the 2024 vintage. All grapes were carefully handpicked and placed into bins. The whole bunches were gently pressed in pneumatic presses to extract the purest juice, known as the cuvée. After an overnight settling period, the juice underwent fermentation in stainless steel tanks at a controlled temperature of approximately 15–17°C, using specially selected yeast strains. Malolactic fermentation was intentionally avoided to preserve the wine’s freshness, and expert blending preceded the bottling process.

Production Details Stellenbosch's 2022/2023 season began with mild and dry conditions which had a crucial impact on grape quantity and quality. Drier conditions limited berry mass and subsequently yields, but also ensured outstanding quality. The cool ripening period aided early cultivars, and high-quality wines were prepared during this time. Vineyards that were well managed handled the unfavourable conditions well and produced high-quality grapes. The grapes were handpicked and gently pressed to collect the purest juice, which was fermented in stainless steel tanks at 14-16°C with selected yeast strains for optimal fruit and freshness. After expert blending, the wine underwent bottle fermentation, creating fine bubbles. It was then aged for at least 16 months in cool, dark cellars, adding complexity to the red berry flavors. Once harmony was achieved, the yeast was removed through disgorgement, and a small dosage was added to create a perfectly balanced brut rosé.
Tasting Notes

Palate: lively, fresh

Production Details All grapes were handpicked in bins. Whole bunches were gently pressed in pneumatic presses to collect the purest juice called the cuvée. The juice was fermented in stainless steel tanks, at about 14-16°C, with specially selected yeast strains to ensure optimum fruit and freshness in the wine. The final composition of the Rosé is determined by meticulous tastings before the different cuvées are expertly blended resulting in the most refined and fruity wine. The fermentation in the bottle creates the millions of magic bubbles. The bottles are then matured in our cool and dark cellars for at least 15 months, adding layers of yeasty complexity to the delicious red berry flavours. When the perfect harmony is reached the disgorgement removes the yeast and in the final step a small quantity of dosage is added to finish a perfectly balanced Brut Rosé.
Tasting Notes
Nose: wild strawberries, field flowers, sourdough bread
Palate: fresh strawberries, raspberry sherbet, oyster shell, lightly baked biscuits
