Production Details All components were picked separately and fermented and matured in older oak barrels for 11 months prior to blending and bottling. Chenin Blanc came from a particularly rocky section of the block, was whole bunch pressed and settled without enzymes before spontaneous fermentation and malolactic fermentation. Chardonnay was hand-picked and whole bunch pressed before barrel fermentation. Semillon came from one of the estate's highest-lying vineyards at 280m above sea level on weak, quartz-rich soil; it was destemmed and received some skin contact before fermentation.
