Production Details All components were picked and fermented separately in old oak barrels, except for the Sauvignon Blanc which was tank-fermented. The Chardonnay and Semillon components completed malolactic fermentation and were left without sulphur until blending. Each component matured separately for 10 months before blending and bottling.
