Production Details Syrah grapes handpicked and cooled overnight. Some batches fermented in open top concrete tanks, others in submerged cap. All batches fermented with 30% crushed whole bunch. Spontaneous fermentation. Drained and pressed off skins after fermentation completed. Aged in combination of foudré and seasoned 225L and 300L French oak for 12 months.
