Production Details Syrah grapes handpicked and cooled overnight. Spontaneously fermented with 30% crushed whole bunch in combination of open-top concrete fermenters and submerged cap fermenters. Pressed off skins. Natural malolactic fermentation. Maturation in seasoned oak barrels and 2500L foudré for 12 months. Bottle aging of 9 months before release.
