Production Details Syrah grapes handpicked and hand sorted. 30% whole bunch clusters crushed by foot, remaining 70% destemmed into concrete tanks. Spontaneous, natural fermentation with minimal punch downs and pump overs. Pressed off skins. Natural malolactic fermentation in older French casks and larger 2500L Foudres. Aged 14 months in oak and 3 months in stainless steel to harmonise. Bottle aging of 8 months before release.
