Production Details Hand-harvested grapes destemmed, sorted, and partially crushed (30% whole-berry fermentation). Fermented in open-top fermenters with cap punched down every six hours for 6 days. Total production: 5 barrels. Matured for 19 months in 100% new French oak barrels with two rackings. Origin: Helderberg and Banhoek regions, Stellenbosch. Decomposed granite soils on south-westerly slopes. Drinking window: 20 to 30 years from vintage.
