Production Details The vines are dryland farmed and rooted in weathered Table Mountain sandstone at 600 meters. Grapes are hand-harvested and chilled overnight. Whole clusters are gently incorporated into spontaneous fermentations driven by vineyard yeasts. The wine matures for up to sixteen months in a mix of French 2,500L foudres, 225L barriques, concrete tanks, and clay amphorae for the Grenache Noir. Oak is seasoned and subtle. Before bottling, the wine is lightly sulphured and filtered.
