Production Details Vineyard planted in 1987, making it the first commercial Chardonnay planting in the Elgin region and holds Certified Heritage Vineyard status from the Old Vine Project. Whole-bunch pressed, naturally settled without enzymes. 100% spontaneous fermentation in French oak barrels (30% new, 30% second-fill, 40% third-fill). Minimal lees work for mid-palate texture, aged on lees for 9 months. No malolactic fermentation performed to preserve crystalline acidity. Fined and gently stabilised. 96 cases produced, 60 cases auctioned.
