Production Details Hand-harvested fruit with bunch sorting in the vineyards. The Sauvignon Blanc was picked from 1 block on D'Aria. Partial whole bunch press, with fermentation in barrel and concrete egg. Matured in French oak barrels, 40% new, for 9 months. Partial malolactic fermentation was allowed, and a component was kept in concrete to add freshness to the blend.
