Production Details The grapes were hand-picked, typically in two passes. After destemming, they were gently crushed and pneumatically pressed; free-run juice fermented at 14–18°C in tulip-shaped, glass-lined concrete tanks. The wine matured in those vessels for 12–15 months on fine lees and then rested in bottle for several months before release. The exact-vintage distributor sheet places the vines at 200–300 metres, at 3,000 vines per hectare, and describes the vineyard as organically farmed. It also reports a flexible parcel-by-parcel harvest response after difficult weather reduced yields by 10–20%.
