Production Details Manually harvested fruit from the single Les Boutots parcel in Vaulichères. Approximately two thirds of the must ferments and matures in barrels, including some new barrels, while the remainder stays in stainless steel; maturation is on fine lees without fining or filtration. The vendor recommends serving at 10–12°C and describes the wine as dry.
Tasting Notes Apple, pear, apricot, citrus, orange peel, vanilla, floral and mineral notes; lively acidity, creamy texture and a persistent saline finish.
Food Pairing Fatty fish, shellfish, delicate white meats, roast salmon, langoustines, shrimp, roast chicken, veal and sole meunière.
