Production Details Grapes were harvested manually and rigorously sorted, then underwent semi-carbonic maceration without SO2 or yeast inoculation for 24 days in a truncated wooden vat. The wine matured for nine months in old 216 L barrels and was bottled without filtration, with a light sulfite addition.
