Base Wine Years Base-2019 release: 2019 (50%), 2018 (30%), 2017 (20%). Historical base-2013 listing: the source prints “50% 2013, 50% 2012, 2011 and 2010” without clearly allocating the latter years. Historical base-2010 release: 2010 (50%), with the remaining 50% divided equally among 2009, 2008 and 2007
Production Details Base-2019 Bibendum release: 48 months on lees, dosage 1 g/L and a dark-glass bottle intended to protect against light strike. The product title and metadata identify a July 2024 disgorgement, but the attached Wine Advocate review describes an October disgorgement; this conflict is retained, so no canonical disgorgement_date is proposed. Historical base-2013 release: malolactic fermentation was blocked; the wine was fermented and aged in older barrels, spent 60 months on lees, had 4 g/L dosage, and was unfined and unfiltered. Historical base-2010 release: the assemblage included 5% Ambonnay Rouge 2009 and spent 48 months on lees.
Tasting Notes Bibendum’s base-2019 July-2024 product text: fine, perfumed, delicate and red-fruited. Kristaps Karklins’s attached Wine Advocate review, explicitly describing an October-disgorged base-2019 bottling: cranberries, redcurrant, brioche, tangerine zest, bright acidity and tension, and a precise mineral finish
Food Pairing Refined aperitif service or food pairings (Kristaps Karklins review of the October-disgorged base-2019 bottling)
