Production Details Manual harvest in small crates, sorting at the winery and 100% destemming. After seven days of cold maceration, fermentation was temperature controlled with two pigeages daily and 21 days total vatting. The wine matured on its lees for 15 months in oak barrels, 30% new. Malolactic fermentation was natural and late; the wine was neither fined nor filtered, and racking and bottling were by gravity.
Tasting Notes Burghound's cited 2022 review describes red berries, especially cherry, exotic spice, floral notes, refined texture, minerality and a bitter-pit-fruit finish.
2016 Technical Specifications
Region Clos de la Bousse-d'Or
Harvest Dates Estate harvest began 26 September 2016 and continued into October; the source does not isolate this vineyard's picking date.
Production Details For the estate's 2016 wines, Patrick Landanger reported complete destemming, a seven-day cold maceration, two pigeages daily at the start of fermentation and up to five daily at its peak, followed by seven to eight days of post-fermentation maceration. Volnay holdings yielded 30–35 hl/ha, a contextual range not specific to this vineyard. For Clos de la Bousse d'Or, three 1,600-liter Terranova amphoras were used: two were reserved for a separate amphora bottling and the third was incorporated into the normal release.
Tasting Notes Stephen Tanzer, January 2018: the regular 2016 bottling showed deep ruby color, black cherry, licorice, herbs, black pepper, a stony profile and firm dusty tannins. The separately bottled amphora release showed deep dark ruby color, black cherry, dark chocolate, violet, menthol, pepper and saline minerality, with a thicker texture and finer tannins than the regular bottling.
