Production Details Primarily from the Schimberg lieu-dit in the Guebwiller valley on volcanic subsoil with full south exposure. Slow pneumatic pressing with static settling. Fermentation in temperature-controlled foudre for 1 to 4 months, followed by lees aging for 6 to 8 months.
