Production Details Grapes were hand-picked, destemmed and carefully sorted, then gently fed into fermentation tanks for a cold soak before fermentation. The juice was pumped over the skins during fermentation and warmed late in fermentation to increase colour and tannin extraction. After fermentation, the wine was drained into a mix of French-oak barriques for approximately 8 months, completed malolactic fermentation in oak and remained on its lees before blending. The producer recommends serving at 16–18°C and states ageing potential of over 8 years.
Tasting Notes Producer: bright ruby red, with ripe strawberry, blackberry, black plum, violet and light toast; fruity palate with soft tannins, medium acidity, spice, chocolate and coffee. Ian D’Agata's 2023 China Wine Summit report: deep ruby, coffee-led nose, smoother and more nuanced palate with tar, licorice and dark berries, a very long finish, and rising violet and chocolate notes.
Food Pairing Soy-sauce-braised pork, fried beef steak, Korean or Japanese barbecue, and roast chicken with sauce
