Production Details Only the best fruit from the Cabernet Franc planted on a separate hill southeast of the winery was selected for this Reserve. The fruit was destemmed and sorted, then gently fed into fermentation tanks and cold-soaked before fermentation; pump-overs were used during fermentation. After fermentation, the wine was drained into French oak: 40% new barrels and 60% one-year-old barrels, for approximately eight months. It completed malolactic fermentation and remained on its lees while in oak before blending. The recommended serving-temperature range is 16–18°C. Estate-level context, not a block-specific measurement: Mystic Vineyard ranges from 10–80 metres above sea level.
Tasting Notes Producer: bright ruby red; rich red-fruit and blueberry aromas with toasted oak and spice; balanced body, elegant structure, ripe grainy tannins, opulent fruit and a long finish. Bettane+Desseauve tasting team, September 2023: floral and crisp-fruit fragrance with lavender and menthol, cool and slightly sweet palate tones, delicate lacy tannins, minerality and crystalline acidity.
