Production Details Grapes, from Certified Heritage Vineyards planted in decomposed granite soils between 1979-1984 and yielding only 4 tons/ha, were harvested at 23°B in the early morning hours to retain its freshness and fruity characters. After de-stalking and crushing, the juice was fermented in a combination of 1st and 2nd fill 500L French oak barrels, Amphora clay pots and concrete eggs. The wine was matured in these same vessels for a period of 12 months, with regular batonnage (stirring of the lees) to enhance complexity.

Nose: lemon zest, pineapple, yellow stone fruit, vanilla, toasted almonds, butterscotch
Palate: creamy entry, fleshy textured mouthfeel, stone fruits, citrus, yellow apple
Food Pairing roast chicken with lemon, thyme and garlic, pan-seared scallops with brown butter and almonds, pork belly with apple puree or cider glaze, grilled line fish with beurre blanc or lemon butter sauce, baked cheesecake with lemon zest
