Production Details Organically certified single-vineyard bush vines in Groenberg, Wellington, at 293 m on a southwest-facing decomposed-granite slope. Grapes were picked at optimal ripeness, cooled overnight to 4°C, whole-bunch pressed and spontaneously fermented in a concrete egg-shaped tank. The wine spent 10 months on the lees before blending and bottling and received one sulfur addition in deep winter; the analysis also reports free SO2 of 35 mg/L and volatile acidity of 0.48 g/L.

Production Details Fruit came from the restored Boberg old-bush-vine site in Wellington. The cooler site was picked early in 2020 when the grapes were ripe but sugar remained low; the juice fermented spontaneously in a 1600 L concrete egg-shaped tank and was bottled as a single-vineyard wine.
