Production Details The grapes were destemmed and kept as whole berries. A portion of the stems was left to dry in the sun for five days before being added back into the tank. The dried stems contribute perfumed aromatics and texture to the wine. Punch downs were performed twice daily. Maturation took place in ceramic amphorae and old French oak barrels.
