Production Details Technical analysis lists FSO2 43 ppm and TSO2 94 ppm. Semillon sourced from Bot River and Chenin Blanc from an organically farmed Durbanville vineyard. Both parcels were hand-harvested, chilled overnight, and pressed the following day. Whole-bunch pressed to tank for overnight settling, then racked into large neutral-fill French oak barrels for natural fermentation. Once dry, the wine remained on gross lees for 6 months with regular stirring and no sulphur additions. Just prior to bottling it was racked, sulphured, protein-stabilised, and gently filtered.
