Production Details Chardonnay grapes were selected from high-altitude, cooler-climate Elgin vineyards and harvested early before daybreak at lower sugar levels for pristine MCC base wine. Grapes were whole-bunch pressed in separate lots, with only the first 500 litres per ton retained. After the first fermentation, the tank was filled and left on the primary lees until blending. The final base wine was stabilised and filtered, then underwent bottle fermentation after addition of liqueur de tirage. The wine spent a minimum of 96 months on lees before riddling, another 24 months before disgorging, totalling 120 months on lees, followed by a further minimum of 12 months on cork.
