Production Details Fruit was picked at optimal ripeness, cooled overnight to 4°C, partially destemmed into open-top fermenters and fermented spontaneously. It remained on skins and stems for as long as possible, was pressed into small barrels comprising 25% new oak, matured in barrel for eight months, then blended and bottled. The producer also reports free SO2 of 37 mg/L, total SO2 of 71 mg/L and volatile acidity of 0.54 g/L.
