Production Details Old, unirrigated bush vines grow on the mid-slopes of Riebeeck Kasteel mountain in Swartland. Fruit was picked at optimal ripeness and cooled overnight to 4°C, then partially destemmed with 30% retained as whole bunches. It fermented spontaneously in open-top fermenters and remained on the skins for as long as possible before pressing into older, small French-oak barrels. The wine spent 18 months in barrel before blending and bottling. Additional finished-wine analysis lists free SO2 at 23 mg/L, total SO2 at 70 mg/L and volatile acidity at 0.65 g/L.
