Production Details Official producer page states this is a blend from vineyards around the Paardeberg with some Darling/Swartland Chenin blanc. Grapes were cooled overnight to 4 degrees Celsius, pressed as whole bunches, fermented spontaneously in concrete egg-shaped tanks, amphora, and older French oak barrels, received one sulfur addition in deep winter, then spent 10 months on lees before blending and bottling.
