Production Details 100% Chenin Blanc from old dry farmed parcels planted 1974-1989. Wide planted, low density vineyards with yields ~1.5 ton/ha. Hand sorted, whole bunch pressed with very lightly settled (cloudy) juice, no additions. Wild fermentation in foudres and old barrels (mostly 400L) for ~1 month. Aged on lees for ~12 months in barrel, then rested in tank on fine lees for 6 months without fining prior to bottling. Minimal intervention, no enzymes, no added sulfur in fermentation, no added yeast.
