Production Details A second berry sorting was performed in the cellar, followed by inoculation with a pure yeast culture. The juice was pumped over the skins 3–5 times per day for five days; after fermentation, the wine was drained off the primary lees and transferred to a resting tank.
Tasting Notes Dark plum colour; red berries, cherry, cranberry, violets and white pepper; rich palate with darker fruits and a dry tannin finish.
