Production Details A second berry sorting was performed in the cellar, followed by inoculation with a pure yeast culture. Juice was pumped over the skins 3–5 times daily, with manual punch-downs for five days. After fermentation, the wine was drained from the primary lees and transferred to a resting tank.
Tasting Notes Fragrant; plums; blackberries; cassis; smoky nose; juicy, jammy plum tannins; well-integrated oak; lingering finish.
