Production Details A second berry sorting was performed in the cellar. A pure yeast culture was inoculated; juice was pumped over the skins 3–5 times daily, with manual punch-downs for five days. After fermentation, the wine was drained from primary lees and transferred to a resting tank.
Tasting Notes Juicy and well structured, with ripe black fruit, mint and eucalyptus on the nose, plus spicy oak and plum on the palate.
