Production Details Hand-harvested grapes were sorted and crushed into stainless-steel tanks; cold-soaked for 4 days; inoculated with BM45 and NT50 cultured yeast; pumped over 3–5 times daily and punched down for 5 days during fermentation; fermentation completed after about two weeks; coarse-filtered before bottling.
Tasting Notes Deep ruby-brick colour; cassis, leather and spice on the nose; elegant, dry palate with red-berry fruit and spice; dry, grainy tannins and a leathery aftertaste.
