Production Details Single-vineyard Chenin Blanc from the Southernmost Swartland on the Paardeberg. The vineyard is planted on a granite-based mountain at nearly 400m and is exposed to wind and sun. Harvested in the morning, chilled overnight in a cold room, whole-bunch pressed the next day, settled overnight without enzymes, then racked into old 300L barrels for natural fermentation. The wine spent 10 months in barrel before blending and bottling.
