Production Details Single-vineyard, old, unirrigated bush vines grow in the Swartland flatlands on Darling's side of the region. Grapes were picked at optimal ripeness, cooled overnight to 4°C, whole-bunch pressed and spontaneously fermented in amphora and older French oak barrels. The wine received one sulfur addition in deep winter, remained on the lees for 10 months, and was then blended and bottled. Additional finished-wine analysis reports free SO2 of 24 mg/L and volatile acidity of 0.57 g/L.
