Production Details 100% Chenin Blanc from 40-50 year old dry-farmed bushvines on pure decomposed granite at 300-350m elevation in Paardeberg. Hand-sorted and wholebunch pressed. Juice very lightly settled (prefer cloudy raw juice) with no additions. Wild fermentation in cement eggs, foudres, and old barrels of various sizes lasting approximately one month. Kept on lees for around 12 months, then rested in tank on fine lees without fining for further six months prior to bottling. 2022 vintage saw rainy spring followed by three consecutive heatwaves, yielding 2-3 tonnes per hectare (compared to 1-2 tonnes in 2019-2021). No fining, no filtration, no new oak, no manipulation.
