Production Details 100% Chenin Blanc from 40-50 year old dry-farmed bushvines on pure decomposed granite at 300-350m elevation in Paardeberg. Hand-sorted and whole bunch pressed, juice lightly settled. Wild fermentation in cement eggs, foudres and old barrels lasting approximately one month. Kept on lees for around 12 months, then rested in tank on fine lees for further six months prior to bottling. No fining, no filtration, no new oak. No yeasts, no enzymes, no acidification, no sulphur before ferment, no blocking malo, no manipulation.
