Production Details First vintage released as 'Broom Ridge' (renamed to 'Fire by Night' from 2020 onwards). Single origin Chenin Blanc from 20 hectares of mature dry-farmed bushvine Chenin Blanc grown on pure granite soils in the Paardeberg. Vineyards planted between 1972 and 1985 on various slopes. Grapes hand sorted and whole bunch pressed, juice very lightly settled. Wild fermentation in cement eggs and old barrels of various sizes lasting approximately one month. Kept on lees for around 12 months, then rested in tank on fine lees for further six months prior to bottling. Bottled without filtration. No fining, no new oak, no manipulation.
