Production Details The grapes were de-stemmed and lightly crushed. The juice was immediately pressed, using only the lightest pressings, then stirred with the gross lees for 7 days at 0°C before the clear juice was racked off its gross lees and transferred to stainless tank for fermentation. Matured for six months on fine lees before bottling. Production: 6,600 x 750ml.
