Production Details Banghoek Valley, Stellenbosch fruit from vineyards at 300-500m above sea level, mostly southerly facing. Soils are leached, decomposed granite and sandstone with gravel in the upper layers and clay in the subsoil. Vines are trained on a 7-wire hedge and cane pruned by hand, with average yields of 8-10 tons/ha. Grapes were harvested by hand and pressed directly into old 500L French oak barrels after some skin contact; some skins were added to the ferment. Fermentation commenced spontaneously and the lees were stirred during 9 months of barrel aging. The blend was then aged in tank for a further 4 months and bottled after 13 months total. Production was 3,124 x 750ml.
