Production Details Crafted from three different wards and soils (Decomposed Granite, Oakleaf, Duplex) in Stellenbosch. Heritage Vineyards certified. Old bush vines over 40 years. Grapes picked 21-23°Balling, reductively crushed with 12-18 hours skin contact. Gravity-fed into 400L French oak barrels, 2x500L Italian terracotta amphora, and concrete eggs (first time). No new oak. 8 months on lees in fermentation vessels. No fining or filtration.
