Production Details Traditional Cap Classique from Chardonnay (60%) and Pinot Noir (40%). Handpicked early morning from False Bay region. Whole bunch pressed - free run juice only. Separate varietal parcels vinified in stainless steel. Secondary fermentation and 10 months lees aging in bottle. Rémuage performed. Disgorged with 7.3 g/l dosage.
